We speak with Ivona Stoyanova, the new manager of KOMAT restaurant. After nearly a decade in Copenhagen, she returns to Bulgaria, bringing a wealth of professional experience and inspiring ideas. Her kindness and hospitality will be at the heart of her approach—from her earliest childhood memories to creating an outstanding customer experience.
Hi Ivona! Tell us more about yourself.
My name is Ivona Stoyanova. I was born in Sofia and left just before I turned 20. Now, at almost 28, if I had to describe myself in three words, they would be: empathetic, people-oriented, and very curious :))
I believe my passion for great service began in childhood—my grandparents owned a restaurant where I spent a lot of time. The warmth and hospitality I experienced there left a lasting impression on me. So when the time came to choose a career path, I had no doubt that I wanted to study at the Vocational school of tourism.
Denmark is a significant chapter in your story—how did you choose this destination?
I moved to Denmark right after high school and have spent most of my adult life in Copenhagen. My brother, who is also my best friend, played a key role in my decision to go. He was already living in Denmark and shared his experiences in the industry and the opportunities for growth—I'd say he successfully “sold” me on the idea (laughs). With his support, I made the move, and an incredible adventure began!
Curiosity has always been the driving force behind my career. I wanted to explore the hospitality industry from every possible angle, gaining hands-on experience in every part of the business. While studying International hospitality management, I started working at Nyhavn, a well-known tourist spot in Copenhagen. Later, I moved to Sovino Brands, where I encountered a different customer profile. That’s when I gradually became involved in the world of fine dining.
With the KOAN team, we launched two pop-up restaurants in different locations before opening a permanent venue, which later earned two Michelin stars. My next career step brought me back into the hospitality industry. At the iconic Hotel D'Angleterre, also known as The White Lady, I worked my way through all levels of service, further refining my skills.
What has Copenhagen given you—both in life and in your career? Paradoxically, the Danes are considered one of the happiest nations, despite the cold and the lack of sunshine...
The Danes are among the happiest people because they truly appreciate what they have—even something as simple as a sunny day! Their society is built on a horizontal hierarchy, meaning the traditional power distance we see in many other cultures is almost nonexistent. Social confidence is deeply rooted in the words of Danish philosopher Jante, who said: “You must not think that you are special or better than us.” This mindset fosters respect for people and every profession.
This respect is also reflected in the workplace. While expectations are high, so is the appreciation for people, which is something I find less common in Bulgaria. A great example is the role of a waiter, which is viewed with dignity as a legitimate career path rather than just a temporary job.

From Hygge to the Untold Riches of the East! What is the most important prerequisite for running a successful restaurant in Dubai, where you recently traveled?
I’m fortunate to have the opportunity to travel and explore different professional destinations. My trip to Dubai was at the invitation of the Swedish company Frantzén, the only restaurant in Sweden with three Michelin stars. The contrast between Denmark and Dubai is striking—while Denmark is all about coziness and balance, Dubai is a world of luxury and extravagance, where even workplace dynamics operate differently.
Today, you are the new manager of KOMAT. What impressed you the most about the place?
It impressed me with an attitude, which is something I deeply value. The team at DOT Sofia, and especially at KOMAT restaurant, is an inspiring mix of intelligent and talented individuals. I believe this gives us a unique opportunity to present Bulgarian hospitality in its best light. People working in tourism here often don’t realize the immense potential they have—to create unforgettable memories for their guests!
What can we expect from KOMAT in the coming months?
We will focus on showcasing Bulgarian hospitality in various ways—through food, contemporary Bulgarian art, and, of course, accommodation. We take great pride in working with Bulgarian producers, whom we consider invaluable partners in delivering authentic and high-quality experiences.
A set menu crafted from high-quality products sourced from local farms awaits us. We are committed to promoting Bulgarian wines, highlighting the best selections from the region. Our goal is to present refined Bulgarian cuisine in a cozy, informal atmosphere.
The price you pay for working abroad is the absence of "home." No matter how much time passes, the distance never truly shrinks, and the longing to return only grows stronger.
