Chef Alexander Gotsev, one of the founders of KOMAT, visited the restaurant in early July to share his summer gourmet concept for the upcoming Culinary Pop-up. Bohemian flair, friendly gatherings, fresh flavors, and good vibes - all of this for a truly "vital combination."
Hello, Alex! We're meeting in a familiar place, KOMAT, but this time for the Culinary Pop-up. How would you present yourself today, after stepping down as the restaurant's chef?
I see myself as an explorer. For me, food is not just an art; it is also a science, a way of being, a complex approach. It is a tool that allows us to understand the true essence of life. In 2016, I founded an institute to study the human taste sensorium. Later, I developed a holistic kitchen where I observe our behavior while eating - the influence of light, sensations, and the enhancement of smell at the expense of sight...
Speaking of everyday meals, what do you think a summer plate should contain?
Lots of vegetables, for sure! I try to combine macro and micronutrients to bring us vitality. Lately, I've been focusing on the impact of food on a biochemical level because its effect on the psyche is undeniable. In the search for vitality and energy for life, we inevitably come to food. If you know how to combine ingredients, you can create not only a delicious dish but also something beneficial for your body and psyche.
Is there any product that you will definitely include in KOMAT's Culinary Pop-up?
I will stick to the concept - Bulgarian, cosmopolitan, but with new, fresh products. I can't shake off the bohemian style; it's deeply rooted in me! If I make kachamak, it won't be with water; I'll make it with milk. I believe everyone I cook for leaves happy and satisfied with life. This time will be no exception!
Which dish from KOMAT remains your favorite creation?
The kachamak, for sure!
How do you feel in the company of the other Culinary Pop-up participants?
I feel extremely good! Niki and Elena have been friends for years, and I also know Martin. I met Vladi recently, but I'm looking forward to working with this special group.
Why is it important for such collaborations to happen?
I see all of us as part of a single cell in a huge organism that literally affects society. These conversations are valuable because they offer us an opportunity to exchange experiences and information, to understand where we are today. Each participant addresses the topics I also deal with, making our collaboration even more meaningful.
This summer, the kitchen of the KOMAT restaurant will be transformed into a space for new ideas, friendly encounters and experimental tastes. We welcome you with a Culinary Pop-up that will present four concepts in the face of chef Alexander Gotsev, Vladislav Georgiev ('Sezon'), Martin Nikolov, Nikolay & Elena Petreliyski. United by the creative approach that is an integral part of the the KOMAT philosophy, the guests promise a menu with fresh flavours, the presence of unexpected, seasonal ingredients and a new take on favourite dishes from the KOMAT menu. The summer plate is at the heart of this exploratory adventure in search of lightness and vitality in an urban environment.
