We associate autumn in Sofia with an awakening of the senses - we eat with our eyes and the taste seems to pass through the colors of the season. A warm palette of memories transforms the hectic city and fills it with a feeling of comfort, peace and ease. We are enveloped in the complex but childlike familiar aroma of roasted chestnuts and honey pumpkin, stuffed cambium, spelt and mushrooms, wild garlic and tahini sauce, eggplant and lentils, prunes and roasted walnuts...
In his dishes, Martin Nikolov remains faithful to the authentic, comfortable taste, interpreted elegantly and boldly. The curried cauliflower steak is served with grapes, raisins and hazelnuts. Meat plates - pork chop, bonito and sea bass - also offer seasonal fruits and vegetables. Marinated duck hearts with confit purple potatoes quickly become a menu highlight and can solve any culinary dilemma.
And there are many dilemmas! What dessert to choose? After all, we have toffee sticks with dates, caramel, whipped cream and seasonal fruits, as well as salted chocolate with raspberry coulis and crispy pie crust.
